Tangy Apple Salad

SERVES 4

INGREDIENTS
For the salad:
Spinach
1 tart and crisp apple (like Fuji or Honeycrisp), chopped
2 stalks celery, sliced
1/2 c red onion, chopped
1/3 c dried cranberries
1/4 c sunflower seeds

For the dressing:
2 t lemon juice, fresh squeezed
2 t dijon mustard
2 t honey
1 t balsamic vinegar
2 T olive oil
fresh ground pepper
